My review: This wine was cool to the taste and smell. The first thing I tasted was a cool green apple flavor. You can smell the acidity as an undertone throughout the sniffing and drinking process. I found the texture to be dry and slightly viscous. I didn't really notice the smell or taste of fresh thyme as mentioned above. This wine was served at room temperature. It should be served at slightly cooler temperature to fully appreciate this wine's crispness. I had this wine at a tasting without a meal.
